Seattle & Kenmore · Craft Distillery

Every great spirit begins as a great beer.

Small-batch American Single Malt whiskey, gin and vodka — brewed from malted barley, then distilled in copper stills custom-made in Scotland.

What we believe

From greatbrewing comesgreat spirits

We were brewers first. Every Copperworks spirit starts as a craft beer brewed from malted barley — no hops — then distilled, the old-fashioned way, in copper.

How it is made

We brew it before we distil it.

A brewing-to-distilling process unique in the industry — four steps from grain to cask, each one done by hand.

  1. Craft beer

It starts as a true craft beer, brewed from malted barley without hops — the foundation great spirits are built on.

  2. Wort

The fermented wash carries the character of the grain forward, ready for the still rather than the keg.

  3. New-make spirit

Distilled in copper pot stills custom-made in Scotland for each individual Copperworks spirit.

  4. The cask

Aged in oak into American Single Malt whiskey — small batches, patient barrels, numbered releases.

Who we are

Brewers who became distillers.

Copperworks was founded in 2013 by Jason Parker and Micah Nutt — Jason was the first brewer at Pike Place Brewery in 1989, and went on to Redhook and Pyramid; Micah, a software engineer, automated his home brewery with custom circuit boards and then chose to distil the old-fashioned way, because craft is more fun without the automation.

A third owner, Jeff Kanof, left a New York City law career to help bottle the first batch and now directs sales. The idea was simple and stubborn: distil high-quality craft beer, without hops, into fine spirits using copper stills made for us in Scotland.

The distillery opened on Seattle’s Alaskan Way waterfront, and in 2023 we added a community cocktail bar and tasting room in Kenmore.

Combining traditional methods with innovation and the unexpected.
